When you have children you want to give them everything that is better and healthier. So we thought, what could make the little capricious happy? A soup. Delicious and healthy, it is preferred by many children. Let’s see together how we can prepare it.
Ingredients cherry red soup
- 1 kg of well-ripened organic cherry tomatoes from Letca
- 1/2 onion
- 2 carots
- 1/4 piece of celery
- 1 parsley
- 1 potato
- 30 ml of extra virgin olive oil
- 1 sprig of basil, green parsley
- Salt to taste
- 1 teaspoon sugar to balance the acidity of the tomatoes
Prepare cherry red soup
We will cook the tomatoes in boiling water for 1-2 minutes to peel them easily.
After peeling the tomatoes and removing the wood next to the tail with a knife, put them in a pot to boil together with a sprig of basil and a pinch of salt. (about 15 minutes)
Meanwhile, clean the vegetables, wash them and cut them into small pieces.
Put the oil in a pot large enough to fit all the ingredients, including the cherry tomatoes that we have cooked. We will fry all the vegetables in oil, leaving them on low heat, without browning. As soon as the vegetables soften, add a cup of water and continue to boil.
After about 10-15 minutes of boiling, we will take after the fire the pot with the well-cooked cherry tomatoes. We will mix them with the blender and pass them through a sieve, so as not to cause allergies, the tomato seeds.
The mashed tomatoes are added over the hardened vegetables. Fill with water until it reaches the consistency we want. Add a teaspoon of sugar and salt to taste.
Continue to boil the tomato soup until the vegetables have the desired consistency. If desired, you can also pass the vegetables, making a cream soup.
At the end we decorate it with parsley or we can put some croutons.
